Looks really good. Just a question on the bottom right diagram showing the carboxyl group in high pH, should it be C=O instead of C-OH due to deprotonation?

Nice clear summary resource. Ideal for inclusion in lessons on proteins if enzymes are not a large part of the syllabus as it covers all the basics.
