Ingredients

30g golden syrup
30g butter
30g soft brown sugar
1 tsp vanilla extract
lemon
50ml double cream or whipping cream

Method

  1. Place a saucepan on scales and weigh out 30g of golden syrup
  2. Add 50g of butter or margarine to the pan
  3. Add 30g soft brown sugar
  4. Add 1 teaspoon of vanilla extract
  5. Gently heat the mixture until ingredients have melted
  6. Remove pan from the heat
  7. Squeeze 1/4 juice from a lemon and add to mixture
  8. Stir in 50ml of double cream
  9. Mixture will thicken slightly as it cools
